Grain-free Banana Pancakes

Oh so good Banana Pancakes with only 3 ingredients!

2 ripe bananas
1 egg
1 tbsp nut butter (almond is delicious)

Mash bananas and then stir in egg and nut butter.  Warm skillet over medium-low heat and add a little coconut oil for cooking. Ladle some of the pancake mix into skillet and cook over low heat. They'll take a little longer than traditional pancakes, so be patient.  You'll know you're ready to flip when the edges brown and there's little bubbles throughout.

Serve with maple syrup or jam for an extra treat!
