So, I love to bake and think filling my apartment with the scent of something delicious and hot in my oven is the best. I rarely buy baked goods and prefer to make my own, but I have one weakness- the sweet potato date muffins at Urban Herbivore. They are SO delicious and every once in awhile I break down and buy myself one. Clearly, there was only one thing I could do. . .figure out their recipe and make my own. And did I EVER!!
Not only were these muffins delicious they turned out even better than Urban Herbivore's (if I do say so myself!). Instead of cane sugar I sweetened mine with maple syrup and I seriously reduced the oil content so they were way less greasy. And now, I share this new recipe with you, and hope you feel adventurous enough to take your favourite bakery indulgence and turn it into your own creation.
2 bananas, ripe and mashed
1/3 cup sunflower oil
1 tsp cinnamon
1 tsp vanilla extract
5-6 medjool dates, chopped Mix these ingredients up, then add:
1 1/4 cup diced and steamed sweet potato (don't let them get mushy, just soft)
1 cup spelt flour
1 tsp baking powder
3/4 tsp salt
Mix and spoon into muffin tins, makes 4-5 large or about 8 small muffins. Bake at 375 for 20-25 minutes. Your kitchen is going to smell fantastic!!
