Spring is in the air. And in the melting snow, the smell of the earth and the sightings of crocuses pushing up through the ground. And in my appetite!! As the season transitions so does my diet. I start to feel less excited about root vegetables and dense soups and my palette begins to crave green, fresh and light.
So, in honour of transitions and seasons and Spring, here are 2 recipes that have become favourites in our kitchen.
Green Goodness Juice -makes 2 large juices
1/2 bunch of spinach
3 stalks of celery
1 lemon, peel removed
*optional add a few sprigs of parsley or cilantro for extra green deliciousness
-Juice greens first, then follow with cucumber for juice to push through extra pulp. Then apple and lemon. I usually run all the pulp through the juicer a second time to get all the goodness out.
Strawberry Sunrise Smoothie -makes 2 large smoothies
3 large grapefruits
2 cups strawberries
*optional add 1 cup organic kefir or yoghurt
*optional add a few tablespoons of coconut milk and half a banana for a tropical taste
-Juice 2 of the oranges and 2 of the grapefruits.
-Put the remaining peeled orange and grapefruit in a high-powered blender, add the juice and the strawberries and blend on high for a minute to break up all the citrus skin.
-Add yoghurt, kefir or coconut milk if using.
