Mmmm, marvellous muffins making deliciousness possible on the go. And when they're stuffed with Canadian super-berries and iron-rich dates. Yum.I adapted this recipe from my favourite Ayurvedic cookbook, and you can feel the grounding effects with each bite. . .give them a try, they're fool-proof, I promise!
2 large ripe bananas-mash 'em up
1/4 cup sunflower oil
1/4 cup all fruit berry jam (no sugar please) or maple syrup
1/2 tsp or more of cinnamon
1/2 tsp cardamon
2 dates cut into little pieces- I use Medjool Mix all these together then add cranberries, blueberries, blackberries or raspberries or a combination of your favourites, I use 1 1/4 cups, but I'm a berry glutton, you can choose to be moderate Then add your dry stuff
1 1/4 cup flour- Spelt flour
1 1/2 tsp baking powder
1/2 tsp salt
Stir until just mixed, then spoon into muffin tray and toss into a pre-heated 350 degree oven. Bake for 25 minutes, test to see if they are done by sticking a toothpick into the centre of one, if it comes out clean, they're done. If not, bake a few more minutes. Remove from oven and I dare you not to dig into one while its piping hot and cinna-smelly!
