Fermented Asparagus Kimchi

Asparagus season is in full swing in Ontario and this recipe is one of my absolute favourite ways to preserve them. The acidity that develops during the fermentation softens the asparagus and the flavour of the Thai herbs is infused in every bite. They're amazing on their own straight out of the jar, but also really lovely on top of a wrap or burger for a little extra kick of flavour. 


Not only do these spears contain a healthy dose of probiotics from fermentation, but asparagus are also rich in inulin, a prebiotic fiber that beneficial microbes feed on. Prebiotics are just as important as probiotics. We need to provide food for beneficial probiotic bacteria like Lactobacilli and Bifidibacterium strains for them to benefit our bodies. Prebiotics reduce inflammation in the gut, prevent diarrhea and constipation, and balance blood sugar levels.
